Sweet Vermicelli, is a delightful dessert made with vermicelli, ghee, sugar, cardamom, and nuts. Also known as Semiya Kesari or Parsi-style sweet seviyan. Quick and easy to make, ready in just 15 minutes.

In my childhood, my mom often made Meethi Seviyan, a quick, easy, and delicious dessert. I love it even for breakfast as it’s not overly sweet. We also enjoy Semiya Kheer and Sheer Khurma. If you prefer savory, try Seviyan Upma.
Vermicelli
For those unfamiliar with vermicelli, vermicelli is a thin spaghetti-like noodle with a unique texture. I prefer using thick vermicelli in this recipe. They’re a pantry staple, cook quickly, and are great for busy times.
INGREDIENTS FOR SWEET VERMICELLI
- Vermicelli – 1 cup
- Ghee – 2 tbsp
- Cashew cut in halves – 2 tbsp
- Almonds cut into halves – 2 tbsp
- Raisins – 2 tbsp
- Cloves – 2
- Cardamom – 1
- Water – 1 ½ cups
- Sugar – ¾ cup
- Ghee for garnishing – 1 tsp
- Red Food Colouring
HOW TO PREPARE SWEET VERMICELLI
- Heat 2 tbsp ghee in a pan. Add nuts and roast until crisp and golden brown. Remove and set aside.
- Roast semiyan (vermicelli) in the same pan until golden and crisp. Remove and set aside too.
- Now add water to the same pan and boil. Once the water is boiled add cloves, cardamom, and roasted semiyan. Cook until semiyan is soft.
- Add sugar, mix well, and cook until sugar melts. Lower the flame, cover the pan, and let it cook for 5 minutes.
- After five minutes, add red food coloring and mix well. Cook for another 5 minutes.
- Garnish with chopped nuts and 1 tsp ghee. Meethi semiyan is ready to serve.
