Pasta is my ultimate comfort food – hearty, filling, tasty, and incredibly easy to make. Whether I’m hungry after a long day at work, need a late-night snack, or have to pack lunch for my family during the morning rush, pasta is always my go-to dish. There are countless types of pasta shapes, sauces, and recipes out there. So today, I’ll be sharing one of my all-time favorites – a simple and easy pasta made with homemade white sauce or bechamel sauce. This sauce requires basic ingredients that you probably already have in your kitchen, and you’ll soon discover how effortless it is to prepare.

The key is to cook the flour over a medium-low flame until it turns light golden and aromatic. Keep stirring the sauce as it thickens to your desired consistency. After the sauce is cooked, enhance it by mixing in some freshly grated nutmeg and your preferred cheeses. Continue cooking and stirring until the cheese melts. This sauce is quite forgiving, and it’s challenging to go wrong with it 🙂.

Enhance the pasta’s wholesomeness by incorporating your preferred herbs and veggies. For this particular recipe, I’ve included chopped sun-dried tomatoes cured in olive oil and sliced kalamata olives. Feel free to give it a try and share your feedback. Enjoy!

DETAILED STEPS TO PREPARE HOMEMADE WHITE SAUCE PASTA

INGREDIENTS FOR HOMEMADE WHITE SAUCE PASTA

  • 6 oz (180 g) Pasta of your choice
  • 1 tablespoon Olive oil
  • ½ Onion finely chopped
  • 2 Garlic cloves finely chopped
  • 1 to 2 Green chilies / Serrano pepper finely chopped
  • ½ teaspoon Dried parsley
  • ½ teaspoon Dried basil leaves
  • 4 oz Mushroom chopped
  • ½ Capsicum / Green bell pepper chopped
  • Salt to taste

For the white sauce

  • 2 ½ tablespoon Olive oil
  • 2 tablespoon All purpose flour
  • 1 ¼ cup Whole Milk
  • 1 Slice Cheese (I have used fontina cheese)
  • 1 tablespoon Parmesan cheese
  • Nutmeg – a small pinch
  • ¼ teaspoon Black pepper powder
  • Salt to taste

Other ingredients 

  • 2 tablespoon Sun dried tomatoes chopped
  • 1 tablespoon Olives chopped
  • Cilantro / Parsley / Basil leaves chopped – for garnish

STEPS TO PREPARE HOMEMADE WHITE SAUCE PASTA

STEP |

  • Heat olive oil in a pan. Sauté chopped onion with a pinch of salt until translucent.
  • Then, add garlic and green chilies, sautéing for another minute.
  • Next, include the mushroom, dried parsley, and dried basil, sautéing until the mushroom gains some color.
  • Finally, add the capsicum and sauté for another one or two minutes. Transfer this mixture to a plate and set it aside.
  • As the mixture sits aside, cook the pasta following the package instructions.

2nd Step

  • In the same pan, prepare the sauce by adding 2 ½ tablespoons of olive oil and all-purpose flour. Saute the mixture over medium-low heat for 2 minutes until it becomes a smooth and light golden paste. Be careful not to let it brown.
  • Next, pour in 1 ¼ cup of whole milk and stir constantly until the mixture bubbles and thickens.
  • Now, introduce the cheese slice, parmesan, salt, nutmeg, and black pepper powder to the sauce. Cook for an additional 2 minutes.

3rd Step

  • Add the sautéed ingredients and cooked pasta from Step 1 to the sauce, along with 2 tablespoons of sun-dried tomatoes and 1 tablespoon of olives. Mix everything thoroughly until combined.
  • For garnishing, use additional olives, sun-dried tomatoes, and cilantro or parsley if you prefer.
  • Your Homemade White Sauce Pasta is now prepared. Serve it hot with bread and relish your meal.

TIPS

  • I began with 1 cup of milk and included an extra ¼ cup for the desired consistency.
  • Adjust the milk quantity to achieve the consistency you prefer.
  • For a cheesier taste, increase the amount of cheese in the recipe.
  • You have the option to replace olive oil with butter or vegetable oil.
  • To add spiciness, include a pinch of cayenne powder.
  • Feel free to use either fresh or canned mushrooms.
  • I utilized dried herbs, but you may swap them with fresh ones if you prefer.
