  • Ground coriander – ½ tsp
  • Low-sodium vegetable broth or chicken broth – 4 cups
  • Water – 4 cups
  • Low-sodium pinto or black beans rinsed – 2 cans (15 ounces)
  • Salt – ¾ tsp
  • Chopped fresh cilantro for serving – ½ cup
  • Lime juice – 2 tbsp
  • Crumbled queso fresco, nonfat plain Greek yogurt, or diced avocado for garnish

HOW TO MAKE CABBAGE SOUP? 

  • Heat oil in a big soup pot (8-quart or larger) on medium heat. Put in onions, celery, carrots, poblano (or bell pepper), and garlic. Stir often and cook until they soften, which takes about 10 to 12 minutes.
  • Add cabbage and cook, stirring occasionally until it softens slightly, which should take about 10 more minutes. Then, include tomato paste, cumin, chipotle, and coriander, and continue cooking while stirring for an additional 1 minute.
  • Pour in broth and water. Add beans and salt. Cover the pot and bring it to a boil on high heat. Then, lower the heat and let it simmer with a partial cover until the veggies are tender, which takes about 10 minutes.
  • Take it off the heat, then gently mix in some cilantro and lime juice. If you like, you can serve it with a sprinkle of cheese, a dollop of yogurt, or some creamy avocado.
